What is Kulfi?
Kulfi /kʊlfiː/ is a popular frozen dairy dessert from the Indian subcontinent. Kulfi is an authentic ice cream popular in the South Asia (Indian/Pakistan region). Its dense, creamy nature is slower to melt than “whipped” ice creams, and the rich flavors make it a unique dairy dessert all in its own. What is Falooda?
Falooda (Faluda), is a cold dessert popular in the Indian subcontinent traditionally with milk, vermicelli and a scoop of ice cream.
Generations of a flavorful tradition
Kulfi may seem like a fairly modern tradition, with it being a frozen treat, but it actually got its start as early as the 16th century. There are written accounts of salt petre and Himalayan ice being used to keep this treat cold, before modern electricity was available. There are a number of ways to prepare Kulfi, from boiling milk to slowly thickening it over time. Regardless of how it is prepared, the same great treat is still available for enjoyment.
